The best granola of all time

Lightly toasted and filled with whole foods.

Lightly toasted granola made with whole foods making for a wonderful granola breakfast bowl or do as I do and dive right into the jar or off the tray as it comes out hot and toasty from the oven.

Truth be told, I’ve never been much of a granola or cereal gal. I’ve always found commercial granola’s either too sickly sweet or bland and tasting of card board.

So it was only natural that I would want to create my own that I think is a perfect balance between sweet, nutty and wholesome.

What I love about this granola is you can totally control the sweetness by adding more or less dates and tahini. You can toast it until it’s super duper crunchy or remove once it’s lightly toasted (my favourite) so that it still has a slightly chewy consistency.

This recipe for granola is so versatile that I also like to use it as a base for my brekky granola bars. See breakfast recipes for my go-to  granola bar recipe, for when you need to eat on the run.

But if you’re still here and reading, then that means you’re here for one thing and one thing only, a tray of beautifully toasted granola.

So, let’s do this!

Yields5 Servings
Prep Time10 minsCook Time15 minsTotal Time25 mins
 12 medijool dates
 ½ cup tahini
 2.50 cups oats
 1 tbsp water
1 cup mixed nuts ( I like almonds & walnuts), roughly chopped
 ½ cup raisins (optional)
 ½ cup sunflower seeds
 ½ cup shredded/threaded coconut
 2 tsp cinnamon, ground
1

Line a large baking tray with parchment paper and set the oven to 150 degrees.

2

Add dates, tahini and water in a food processor and process until a paste forms. Add a touch more water if needed. Set aside.

3

Add all dry ingredients (except raisins) into a large mixing bowl and combine.

4

Add the date paste with the dry ingredients and mix through - you may need to use your hands to get it completely mixed through evenly.

5

Spread mixture across a baking tray and bake in the oven for approx 15 mins or until lightly toasted. Make sure to check your granola a few times and give the tray a little shake to ensure everything toasts evenly.

6

Remove granola from oven and add raisins if using.

7

Store in an air tight container
