Corn fritters with garlic y0ghurt

The perfect weekend brunch or mid-week meal

Creamy garlic yoghurt dip. This recipe is the perfect addition to lots of dishes, baked beans, curries, fritters or just something to dip crackers and veggies into. For when I’m in need of a creamy garlic flavour, this is my go-to.

The recipe yields approximately 1 cup and is best when prepared 1 day in advance so that the garlic has time to really infuse the yoghurt.

Yields 1 cup
 1 cup natural coconut yoghurt
 1 tsp salt
 ½ tsp rice malt syrup (optional)
 2 clove of garlic, minced
 pepper
 3 tbsp fresh lemon juice
 pinch of shredded mint
 ¼ cucumber, diced

Add everything to a bowl and mix until well combined and set aside in the fridge overnight so the garlic has time to infuse the yoghurt.
