Ginger satay sauce

Everyone knows that the best part of any meal is the sauce!

Ginger satay sauce.

Is there a sauce that competes? Probably not if you’re anything like me, a peanut sauce loving monster!

This sauce is versatile and adaptable, it makes it a stay-er, go-to, regular. You get my point. I use this like no other, in fact if you follow my social media channels, I probably post about this sauce way too much. I am sorry but also not because the thing is, I know a lot of my readers are run off their feet. I know because every time I ask what you want to see more of, it’s always recipes that are quick, delicious and versatile. Well, here you go!

My top ways I like to use this:

Make an epic burger by splodging this sauce on top of a tofu steak, adding some slaw and jamming between a burger bun.

Thread tofu onto skewers, heat up the BBQ then, once the tofu skewers are cooked, pour this sauce over the top.

Or turn a plain stir-fry into a ginger satay sauce stir-fry extravaganza. It will taste like the stuff you pay way too much for when you eat out.

The possibilities are endless, which is exactly why I love this sauce so much!

This recipe yields approx. 500ml that’s enough for a family with leftovers to spare.

 ½ cup natural peanut butter
 1.50 tsp soy sauce or tamari
 1 tbsp sweet chilli sauce
 1 tsp sesame oil
 ¾ cup tinned coconut milk
 2 tsp fresh ginger
 1 clove garlic
 1 fresh lime, juice and rind
 1 tsp coconut sugar
 ¼ tsp chilli flakes
 small handful of slivered almonds or peanuts

Grate the rind of the lime into a blender and then juice, then add everything except the slivered almonds to a food processor and process until smooth. Taste and adjust flavours (for example: add more ginger if you prefer more Zing!)

Stir through almonds/peanuts and serve with anything! I love serving atop of nutrition bowls and tofu skewers.
