Wildly vibrant and zesty, this raspberry and lemon smoothie is the perfect addition to any spring menu.

I love smoothies but often I find recipes call for about 3,197 ingredients and strange powders, making them too complex and expensive to make.  But not this one. I’ve tried to keep it as simple as possible while ensuring there is plenty of tart and refreshing spring vibe flavours.

Containing raspberries, banana, cashews, fresh lemon, coconut yoghurt and soy milk, It’s full of all the good stuff without being difficult to make and will leave you feeling satisfied. Enjoy this smoothie as a snack or a meal on the go.

 1 cup soy milk
 1 cup frozen raspberries
 1 banana
 ¼ cup natural coconut yoghurt
 1 tbsp Fresh lemon juice (approx half a lemon)
 1 tbsp cashew nuts or nut butter (like almond)
 1 tbsp Chia or hemp seeds
 ½ tsp lemon rind

Add everything except the chia or hemp seeds and blend in a high speed blender until smooth. Pour into a glass and top with hemp or chia seeds.
