Pretty in pink pancakes

Jazz up ordinary pancakes into something really special.

Pink pancakes anyone?

This recipe is deceivingly easy. It looks complex but with a little restraint (adding the pink potion in small amounts at a time) you create a stunning stack of varying hues of pink pancakes.

The ‘potion’ can also be referred to as pink dragonfruit powder – which also happens to be its real name. I’m sure most of us have seen a dragonfruit before? Much the same as raspberry powder, you use this stuff to add beautiful colours to your cooking, minus any nasties.

I pick mine up from my local The Source Bulk Foods store but it is easily available online and in actual fact what may have been seen as an odd thing to do several years ago, food shopping on line is completely normal these days and I would encourage it.

Whenever I need a specific product that I know might be a little tricky to find, the internet always comes through and usually within a day or 2 I have a delivery to my door and zero hassle was caused. Win!

Back to the pancakes, the recipe will yield about 12 deliciously fluffy and perfectly sweet but not over the top sweet pancakes.

I like to make these on birthdays, Easter, and any occasion that calls for something a little bit spesh.

 350 g self raising flour
 ½ tsp baking powder
 1.50 tsp chia seeds or ground chia seeds
 1 tbsp almond or hazelnut butter
 2 tbsp maple syrup
 420 ml water or nut milk
 20 g approx of pink dragonfruit powder
Optional toppings
 chocolate buckinis
 dark chocolate buttons
 maple syrup
 berries

Add all ingredients except dragon fruit powder into a large mixing bowl until well combined. Add as much or little dragon fruit powder as you like. To create different shades of pink, add more powder to the mix as you cook the pancakes. I.e the first pancake I cooked had no dragonfruit powder and then I added a little to the bowl, and more and more as I went on to create more intense colour.

Heat a little coconut oil in a non stick pan and ladle 1/4 cup for each pancake. Cook for a few minutes over low heat until air bubbles start to appear all over, carefully flip and cook for another minute or so. Continue until you've used up all the batter.

If you're adding choc chips or buckinis, sprinkle these onto the pancake once you pour the batter into the fry pan, it creates a nice visual effect on one side. Vary it up using chocolate buttons for some, plain pink for others and buckinis for the rest. Or just keep it simple and pink!
