Hot Cross Bun Waffles

A deliciously genius alternative to traditional hot cross buns

Hot Cross Bun Waffles. Why haven’t I done this before? If you have visited my recent Hot Cross Scoffin recipe, you will know that I have been caught up in all things Easter-inspired. I am working on bringing you the most simple hot cross bun recipe.  But, I’m also putting out a few alternatives so there is something for everyone.

But, If you do own a waffle maker, why not try something extra special this Easter, or all year round, I won’t judge.

The best part of owning a waffle maker is with a flick of a dial you can have doughy, crunchy or a mixture of the two style waffles.

The Second best part is using your imagination to get creative with your flavours.

I really think these Waffles are the next best thing to a regular Hot Cross Bun. They might even be better. I can’t judge that because I just love all the Hot Cross Bun things equally. If you don’t own a waffle maker, you could use this recipe to make Hot Cross Bun inspired pancakes.

These Hot Cross Waffles would be absolutely perfect served up as breakfast, brunch or evening an evening treat. I love mine smothered with vegan butter or even some nut butter works great. Wash it down with a big mug of hot tea and you’re in heaven.

Besides being so delicious, this recipe is incredibly simple. You literally put all the ingredients (except Sultanas) into your blender or food processor (If you’re not using dates, you could totally even whisky by hand in a bowl) and process until you have a smooth batter. Then pour half the batter into your waffle maker, cook and repeat. Therefore there really is no excuse not to try this one out.

Maybe just as important, the ingredients list is so simple, Only 9 ingredients that you’re likely to already have on hand:

Spelt Flour (you could use ordinary)
Plant based Milk
Medijool dates (or sugar or maple syrup)
Baking powder
Apple Cider Vinegar
Cinnamon
All Spice
Salt
Sultanas

The recipe yields just under 2 cups of waffle batter that will be enough to fill your waffle machine twice over. So it could feed 2 people as a meal or 2 – 4 people as a little heavenly Easter snack.

Hot Cross Bun Waffles
 1 cup Spelt Flour (1 x 250ml cup)
 1 cup Plant based milk
 1 tsp Baking powder
 2 tsp Ground cinnamon
 2 tsp Ground all spice
 1 pinch salt
 ½ cup Sultanas
 3 Medijool dates (or 1/4 cup Maple syrup, or 2-3 TBLSP sugar)
 1 tsp Coconut oil + extra for greasing Waffle iron
Toppings
 Vegan butter
 Vanilla bean ice cream
 Nut butter

Add all ingredients except the sultanas into a food processor or blender and blend until smooth. If you're not sweetening with dates you could also whisk by hand in a medium sized bowl. Once the mixture has been blended, fold in the sultanas until even distributed. If the mixture seems a little on the runny side, wait a few minutes - this should naturally thicken the mixture up. If you are using Maple Syrup as the sweetener you could add an additional 1 TBLSP flour.

Brush a little oil onto your waffle iron (super important) and pour half of the Waffle batter into the Waffle Iron. Set the waffle Iron on your desired temperature ( I like the number 3 setting) and allow to cook. Once ready, Gently lift the edges with a spatula and transfer to a plate. Repeat process once more with the remaining mixture.

Enjoy on Waffles on their own or top with your choice or nut butter, vegan butter or even ice cream.

These turn out super runny for me unfortunately. Added extra flour for the second batch and it was perfect and super tasty!

I’m so sorry to hear they didn’t work for you the first time. But glad you managed to enjoy them with your modification. I do generally tend to wait a few minutes before using pancake or Waffle batter which is why it probably works for me every time as it will naturally thicken up – I don’t do it consciously but will now update my notes on the recipe instructions to reflect this. I will also pop a story up on my Instagram demonstrating how the consistency should be before using and also keep in mind different waffle makers might be of different size, I use 1/2 the batter per waffle but you definitely don’t want to overload or some will spill out the sides and appear too liquidy but it just needs time to cook.
