Start by mixing the chia seeds with water in a glass, stir to combine then set aside.
Add Dates into a food processor and process until they are almost completely smooth. Transfer to a mixing bowl and add the chia seed mixture along with all remaining ingredients except the chocolate.
Stir to combine then, using clean hands you may need to get in there and work the mixture so that everything is mixed evenly.
Roll the mixture into a large ball then place the mixture between two sheets of baking paper and using a rolling pin to roll out to your desired thickness. I usually aim for 2cm thick. Using a knife to push the edges in to form a square-like shape.
Melt the chocolate in the microwave and then drizzle all over the slice. Place in the fridge overnight before cutting into individual bars.
