Six-ingredient cookie dough

A cookie dough treat for anyone out there who has as big of an appetite as I do for all things sweet! This cookie dough is not your regular dough because it contains only eight ingredients and unlike the store bought stuff, this cookie dough recipe uses natural ingredients, no bizarre numbers and letters that may be written in a foreign language, this is a treat you can enjoy with peace of mind.

This is one of the easiest cookie treats you’ll ever make. When you’re next in need of a sweet, nutty treat give this recipe a whirl.

If peanut butter is not your thing (who even are you!?) you can substitute for any nut butter although I’ve tried them all and peanut reigns queen with Hazelnut butter a close second.

The recipe yields enough to make approx. 20 portions. If you’re feeling bold, halve the mixture and with one half roll into raw cookie dough bliss balls and with the other, press them gently onto a paper lined baking tray and bake for 20 – 25 minutes so that they turn into the most delicious chocolate chip cookies.

 1.50 cups Almond meal
 1 cup Organic plain flour
 ¼ cup Rice malt syrup
 ¼ cup Peanut butter
 2 tsp Coconut oil
 2 tbsp Soy milk
 60 g Chocolate chips
 1 pinch Salt (or more to taste)

Add everything to a mixing bowl and combine. Use your hands to form the dough into a ball and roll into a small log or ball. If the dough feels too dry, add a little more soy milk.

Set in the fridge for 10 minutes or more and enjoy as you would your store-bought cookie dough but without all the additives.
