Chocolate nutty power balls

These bites of heaven make for a perfect on-the-go snack

There is good reason that energy balls get so much attention and they are literally everywhere! They are absolutely delicious and so easy to make. It’s amazing the flavours you can create with just a handful of ingredients.

This recipe is a classic. A combination of chocolate and nuts, how could you go wrong. I often make a batch of energy balls each week swapping up the ingredients depending on what I have on hand but you can never go wrong with a simple combo of chocolate and nuts. It really is a recipe that pleases the masses.

What I love about this recipe is that you can use it as a base. A foundation to expand on other flavours. Sometimes I add a few drops of peppermint or orange oil to give a fresh twist or to recreate one of my favourite sweets – Jaffa balls.

but back to the recipe. Chocolate and nuts. I mean, YUM.  If you have been following me for a while you will know how much I love anything chocolate peanut butter and so It’s no surprise that this recipe is heavy on the peanut butter. However if you’re not PB’s biggest fan, simply swap for a different nut. Almonds work brilliantly and are a close runner up in my eyes.

or you can do 50% of each. Try adding peanut butter and then whole almonds for a nice nutty fusion. Whatever you decide to do, try not to eat it all out of the food processor before you roll them. I say this because I do it so frequently and then am left with only a small yield of finished power balls. Oops!

The recipe yields 15 perfect power balls, each weighing 36 grams and contain approximately 150 calories each.

 1 cup Almond meal
 ¼ cup peanut butter
 ¼ cup peanuts or more (see instructions)
 15 medijool dates
 3 tbsp Cacao powder
 1 tbsp water (optional)
 pinch of salt (optional)
Toppings
 extra cacao powder for dusting

Add pitted dates to a food processor and process until the dates become smooth. Eventually they will form a ball in your food processor, this means you're ready for step 2.

Add remaining ingredients peanuts into your food processor and process until well combined.

If you want the balls to have a little crunch, add a further 1/4 cup nuts and pulse for about 10 seconds so they only ever so slightly begin to break down.

Scoop out the mixture and divide into 15 x 36g balls and roll into perfect spheres. You can add a dusting of extra cacao to some of the balls if you like.

Store in fridge for at least an hour before enjoying. The balls will continue to firm up when stored in the fridge.
