Anti inflammatory energy-filled snack, anyone? Did I mention they are down right delicious too?
When it comes to energy balls I always feel like A lot of emphasis goes on the chocolate and nutty flavours and I have no problem with that as everyone would know by now I love nothing more than dipping a chunk of chocolate into the peanut butter jar however I do feel we need to throw a bit more love to chocolate’s fun citrus cousin, lemons!
If like me you like bursting pops of freshness along with added crunch then these super amazing anti inflammatory energy balls are going to be right up alley, my friend.
This recipe will yield 17 energy ballas about the size (45g) yep, that’s about the same size as the ones you fork out $4 for at a café. Save your pennies and make your own!
Combine dry ingredients into a large mixing bowl and mix through.
Combine all wet ingredients in a food processor and pulse until you have a nice smooth paste.
Add wet ingredients into dry ingredients and using your hands mix until everything comes together in a nice big ball. At this stage you can decide to add the coconut oil or not (I do prefer them with).
Form into equal sized balls- I use scales and measure approx 45g each.
Store in an airtight container for several days in the fridge (if they last that long).
